# Alfredo Sauce

A healthier alfredo sauce that uses cottage cheese as a base, which makes it higher in protein and lower in fat than traditional alfredo sauce.

- Cuisine: Italian
- Category: Sauce & Condiment
- Language: en

## Ingredients

- 1 cup 2% low fat cottage cheese
- 1 cup whole milk
- 2 oz parmesan cheese freshly grated
- 2 tsp Italian seasoning
- 0.5 tsp salt
- 0.5 tsp pepper
- 1 tbsp butter
- 1 tbsp flour
- 2 cloves garlic minced

## Instructions

1. Add the cottage cheese, milk, parmesan, Italian seasoning, salt and pepper to a blender and blend until smooth.
2. Add the butter to the hot pan and melt. Sprinkle in the flour and whisk to create a roux, cooking for just a few seconds.
3. Add in the minced garlic and cook for just a minute more, until fragrant.
4. Pour in the blended mixture and whisk to combine, making sure to get in all the corners of your pan so nothing sticks to the bottom. Continue to gently cook on medium low heat, stirring often, for 5 minutes. Remove from heat.
5. Taste sauce and add any more salt or seasonings, if needed. Serve with your favorite pasta, spaghetti squash, however you love!

## Equipment

- blender
- large skillet

## Tips

- Don’t over-reduce/cook the sauce – it thickens more as it cools.
- Since this is lower fat than traditional Alfredo, the flour is added to thicken, if you like a thinner sauce you can skip this step.
