# Slow Cooker Korean Beef

## Ingredients

- 2 1/2-3 pounds boneless beef chuck roast, fat trimmed
- 1 small yellow onion, thinly sliced
- 4 clove garlic, minced
- 1 tbsp ginger, freshly grated
- 1/3 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp gochujang paste
- 2 tsp cornstarch (optional)

## Instructions

1. Place the beef chuck roast in the slow cooker and top with the sliced yellow onion.
2. In a bowl, mix together the garlic, ginger, soy sauce, brown sugar, rice vinegar, sesame oil, and gochujang paste, then pour the mixture over the beef.
3. Cover the slow cooker and cook the beef.
4. Shred the beef using a fork.
5. Stir the beef and serve.
