- 2 tsp black pepper
- 2 tsp coriander
- 2 tsp mustard powder
- 2 tsp garlic powder
- 2 tsp onion powder
- 10 slices Swiss cheese
- Sauerkraut, squeezed dry
- 0.75 cup mayo
- 0.25 cup ketchup
- 2 tbsp finely diced red onion
- 2 tsp finely diced pickles
- 1 tbsp parsley
- 0.5 lemon, juiced
- 1 tbsp Worcestershire sauce
- 2 tbsp sour cream
- 1 tsp horseradish
- 2 tsp horseradish
- 1 whole egg—room temp
- 0.5 lemon, juiced
- 1 tsp Dijon mustard
- 0.5 tsp salt
- 1 cup avocado oil (or organic cold-pressed sunflower or safflower oil)
- olive oil
- butter
- tortillas

## Instructions

1. If making your own mayo, combine all ingredients in a quart mason jar, adding oil last, then blend with a stick/immersion blender and set aside.
2. Combine all 1000 island ingredients, shake until combined, and place into the fridge.
3. Combine all spices and seasonings.
4. Drizzle cube steaks with olive oil, then sprinkle generously with seasoning and massage in.
5. Flip cube steaks to the other side and repeat seasoning.
6. Melt butter in a pan over medium heat.
7. Add cube steaks to the pan and cook for about 5 minutes, until a light crust/sear forms.
8. Flip and repeat cooking on the other side.
9. Remove steaks from the pan and place onto a plate, covering with a bowl to allow steam to get trapped inside.
10. Once steaks are cooked, slice into thin strips, then cut strips into 1-2 inch long slices.
11. Add sliced steak to a bowl, then pour juices over top and toss to coat.
12. To assemble, take a tortilla, then add cheese, a tablespoon or so of sauce, sauerkraut, steak, a little more sauce, then fold in the sides, and roll the tortilla up.
13. Warm a pan to medium heat.
14. Place wraps seam side down and cook until golden brown.
15. Continue cooking until all four sides are golden brown.
16. Repeat for remaining wraps.
