## Ingredients

- 0.5 cup sea salt
- 0.25 cup white wine
- 2 Tbs chopped herbs/spices

## Instructions

1. Add a quarter cup of your leftover white wine to half a cup of sea salt.
2. Let the mixture sit overnight (or at least an hour).
3. Drain any excess wine through a fine sieve.
4. Add a few tablespoons of your favorite herbs and spices (lemon zest and thyme were used as an example).
5. Dehydrate the salt until it is dry.
6. Store the white wine salt in an airtight container.

## Equipment

- fine sieve
- oven
- dehydrator
- small bowl
- airtight container

## Tips

- Citrusy dry wines like Sauvignon Blanc or Pinot Grigio work really well, while sweet white wines like Moscato or Rieslings don't pair well.
- The flavor of white wine is a bit less strong than a bold red. Make sure that your herbs are nearly powdered before adding to make sure they don’t overwhelm the white wine flavor in your salt!
- You can dehydrate using an oven on the lowest setting, an actual dehydrator at 125 degrees, or let it air dry, stirring often.
