## Ingredients

- 250 g granulated sugar
- 125 g hot water
- 2 ml vanilla extract
- 2 vanilla pods

## Instructions

1. Split open and scrape the seeds out of the vanilla pods.
2. Keep the pods because they will be needed later.
3. Add 250g of sugar to the carafe.
4. Pour 125g of hot water (at least 190 degrees Fahrenheit) into the carafe.
5. Stir the sugar and water together until the sugar has dissolved and the syrup has cooled slightly.
6. Add about 2ml or half a teaspoon of vanilla extract.
7. Add the scraped vanilla seeds to the mixture.
8. Stir everything together until the seeds are evenly incorporated.
9. Place the saved vanilla pods into the bottle where the syrup will be stored.
10. Pour the vanilla syrup into the bottle with the pods.
11. Label the bottle with the date and store it in the fridge between uses.

## Equipment

- gram scale
- carafe
- knife
- bottle
- spoon

## Tips

- If you don’t have a water kettle, you can combine the sugar and water in a saucepan over medium heat for 4-5 minutes before resuming the recipe as I have it here.
- Store in a bottle with the pods. Keep in the fridge, this syrup will last for at least 3 weeks (almost definitely even longer but use your eyes and pay attention for any potential bacterial growth)
