4. Melt one stick of butter in a small pot.
5. Add 3 tablespoons of flour to the melted butter and mix until incorporated.
6. Add 1/2 cup white sugar and 1/2 cup brown sugar and mix well.
7. Add 1/4 cup of water and cook until a sauce forms.

9. Jar the apple filling and refrigerate if preparing the day before.
10. Combine 3 cups of flour and 1/2 teaspoon of salt in a bowl.
11. Add two sticks of cold, cubed butter to the flour mixture.
12. Use a pastry cutter to incorporate the butter into the flour until crumbly.
13. Add cold water gradually and mix until a rough, dry dough forms.
14. Divide the dough into two disks, wrap each in plastic wrap, and chill for 4 hours.
15. Flour a clean surface and roll out one piece of dough slowly until it is wider than your pie dish.

17. Pour the apple filling into the pie crust.
18. Fold back the excess crust around the edges of the pie dish.
19. Roll out the second piece of dough for the lattice crust.
20. Use a bench scraper or knife to cut the dough into strips for the lattice.
21. Lay several strips of dough in one direction across the pie.
22. Fold back every other horizontal strip, place a vertical strip, and then fold the original horizontal strips back over it.
23. Repeat the lattice pattern until the entire pie is covered.
24. Trim any excess dough overhang with kitchen scissors and tuck the ends underneath the crust.
25. Roll out any scrap pieces of dough and use leaf-shaped cutters to create decorative shapes.
26. Place the leaf shapes around the edges of the pie crust.
27. Prepare an egg wash by mixing one egg with a little bit of water.
28. Brush the egg wash over the entire pie crust.
29. Bake the pie at 415°F (213°C) for 15 minutes, then reduce the temperature to 400°F (204°C) and bake for another 30-40 minutes.
