# Sri Lankan style chili pepper pork

## Ingredients

- 2 lb pork shoulder
- 2 tsp kosher salt
- 0.5 tbsp ground black pepper
- 1 tbsp ground black pepper
- 1 tsp turmeric
- 2 tbsp coconut vinegar
- 2 medium onion, sliced into rings
- 2 capsicum, sliced
- 5 garlic clove
- 0.5 knob ginger
- 0.5 inch cinnamon stick
- 1 stick lemongrass, sliced open
- 4 clove
- 1 tbsp black peppercorns
- 1 bay leaf
- 2 tbsp coconut oil
- 6-8 dried red chili
- 1 sprig curry leaves
- 1 pandan leaf
- 0.5 tbsp dark roasted curry powder
- 2 tsp chili powder
- 2 tsp sugar
- 0.5 tbsp tomato sauce
- 0.5 tbsp soy sauce
- lime (optional)

## Instructions

1. Cut pork into small bite sized cubes.
2. Season meat with salt, ground black pepper, turmeric, and coconut vinegar. Marinate for at least one hour.
3. Grind ginger, garlic, and cinnamon into paste.
4. Into a large pot add the marinated meat, cloves, lemongrass, black peppercorns, and bay leaf. Add one cup of water, let it come to a simmer (NOT a boil) and let the meat cook.
5. Heat coconut oil and sear the meat until it gets a light char on the outside.
6. Sautee ginger, garlic, and cinnamon paste, dried red chilies, curry leaves, pandan leaf, 1/2 of the sliced onions. Mix well.
7. Add roasted curry powder and chili powder. Toss for 30 seconds.
8. Add the pork back in and add sugar, tomato sauce, and soy sauce. Toss for 30 seconds.
9. Add capsicum, 1/2 of the onions, and ground black pepper.
10. Serve with a fresh squeeze of lime.

## Tips

- Not a fan of pork? Substitute pork with beef or chicken.
- Instead of coconut vinegar, you can use regular white vinegar.
