# Birria Consommé Base

A flavorful base for birria consommé, inspired by chile guajillo sauce.

## Ingredients

- 11 whole guajillo chiles
- 5 whole arbol chiles
- 3 whole ancho chiles
- 2 whole pasilla chiles
- 6 cup water
- 1 whole onion
- 1 whole cinnamon stick
- 2 whole clove
- 6 whole tomato
- 4 whole garlic clove
- 1.5 tsp oregano
- 3 tsp cumin
- 1 tsp black pepper
- 2 tbsp table salt
- 1 whole bay leaf

## Instructions

1. Deseed and devein the guajillo, arbol, ancho, and pasilla chiles, then rinse them under water.
2. Add 6 cups of water to a stockpot.
3. Quarter the onion and add to the pot along with the cleaned chiles, cinnamon stick, and cloves.
4. Add the tomatoes to the pot and bring to a boil.
5. Boil the mixture for 5 minutes.
6. Add the garlic cloves and continue boiling for 10 more minutes (15 minutes total).
7. Turn off the heat, transfer the cooked ingredients to a blender, and pulse until smooth.
8. Strain the blended mixture through a sieve into a pot while hot.
9. Return the pot to the heat and stir in the oregano, cumin, black pepper, salt, and bay leaf.
10. Simmer for 10 minutes, stirring occasionally.
