# Marry Me Chicken Noodle Soup

## Ingredients

- 3 large carrot
- 3 celery stalk
- 1 yellow onion
- 1 small parsnip
- 1/4 cup white wine
- 1 tbsp butter
- 8 whole garlic clove
- 6 tbsp tomato paste
- 6 tsp chicken bouillon
- 6 cup water
- 1/2 lb noodle of choice
- 1 lb chicken
- 1 tbsp avocado oil
- 4-5 tbsp sun dried tomato
- 1 tbsp sun dried tomato oil
- 1 tsp italian seasoning
- 1/2 tsp dried parsley
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
- 3/4 cup heavy cream
- 1 handful fresh parsley
- 1 handful fresh basil
- parmesan cheese, freshly grated (optional)

## Instructions

1. Slice chicken breasts in half and season with salt, pepper, garlic powder, and onion powder.
2. Cook chicken in avocado oil over medium high heat until cooked through.
3. Set chicken aside and chop into bite size pieces.
4. In a separate pot, boil water and cook pasta until al dente, then strain.
5. In the pot used for chicken, heat sun dried tomato oil over medium heat, add onions, and sauté.
6. Add white wine to deglaze the pan.
7. Add celery, carrots, and parsnip with a sprinkle of salt and sauté until softened.
8. Create space in the pan, add butter and minced garlic, and cook for one minute.
9. Stir in tomato paste and cook until it turns a darker color.
10. Stir in sun dried tomatoes and chicken bouillon.
11. Add water and seasonings, bring to a boil, then reduce to a simmer and cover.
12. Add heavy cream, cooked pasta, cooked chicken, fresh parsley, fresh basil, and parmesan cheese.
