## Ingredients

- 6 bone-in chicken thigh
- salt
- pepper
- 3 tbsp olive oil
- 6 strip bacon, chopped
- 1 onion, diced
- 2 carrot, sliced
- 3 garlic clove, minced
- 2 cup red wine (Burgundy or Pinot Noir)
- 1 1/2 cup chicken broth
- 2 tbsp tomato paste
- 2 tbsp flour
- 2 cup mushroom, halved
- 1 bay leaf
- 1 tsp thyme
- fresh parsley, for garnish (optional)

## Instructions

1. Season chicken with salt and pepper, sear in oil until golden, then set aside.
2. Cook bacon until crisp, add onion, carrots, and garlic. Sauté until soft.
3. Stir in tomato paste and flour. Deglaze with wine, scraping the bottom.
4. Add broth, bay leaf, thyme, chicken, and mushrooms.
5. Simmer gently until chicken is tender and sauce thickens.
6. Garnish with parsley and serve with mashed potatoes or bread.

- Use dark wine (Pinot Noir, Merlot) for richer flavor.
