## Ingredients

- 2 lbs ham hocks
- 0.5 cup diced yellow onion
- 2 32 oz containers chicken stock
- 10 cups water
- 1 bundle collard greens
- 1.25 cup water
- 1 tbs Lawry's seasoning salt
- 3 tbs Apple Cider Vinegar
- 0.5 tsp red pepper flakes
- 8 dashes Cholula Hot Sauce
- 2.5 tbs white sugar
- 0.5 tsp onion powder
- 0.5 tsp garlic powder

## Instructions

1. Wash and clean ham hocks. Add chicken stock to a pot and place over medium high heat. Add diced yellow onion. Cook for 2 1/2 - 3 hours, adding cups of water as stock decreases.
2. Wash and chop collard greens.
3. Break ham hocks apart removing only the bones. Add 1 1/4 cup water (only if liquid is low, do not add too much water because greens create liquid). Add chopped greens.
4. Let greens cook for 45 mins - 1 hr or until tender. Add Lawry's seasoning salt, Apple Cider Vinegar, red pepper flakes, Cholula Hot Sauce, and sugar. Taste and adjust seasonings.
5. Serve with cornbread and enjoy!
