# Chicken Masala Biryani

## Ingredients

- 1 medium onion, sliced
- 3 medium tomatoes, sliced
- 1/2 cup fresh coriander, chopped
- 1/2 cup mint leaves, chopped
- 2 tbs lemon juice
- 1 cup oil
- 4 large onion, sliced
- 3-4 whole green cardamom
- 2-3 whole black cardamom
- 1/2 tsp black peppercorns
- 2 whole cinnamon sticks
- 6-7 whole cloves
- 2 whole bay leaves
- 5-6 whole green chilies
- 3 tbs ginger garlic paste
- 1-2 tbs water
- 2 tbs coriander powder
- 1 tsp turmeric powder
- 1 tsp garam masala powder
- 1/2 tbs paprika powder
- 1 1/2 tbs red chili powder
- 2 tsp salt
- 1 kg chicken with bones
- 1 kg rice, soaked and boiled until 3/4th done
- 1/4 tsp mace powder
- 1/4 tsp nutmeg powder
- 1/2 tsp yellow food color
- 1-2 tbs water

## Instructions

1. Combine 1 medium sliced onion, 3 sliced tomatoes, 1/2 cup chopped fresh coriander, 1/2 cup chopped mint leaves, and 2 tbs lemon juice in a bowl and mix well.
2. Heat 1 cup oil in a large pot and add 4 large sliced onions. Fry for 10-12 minutes until golden brown.
3. Remove half of the fried onions from the pot and set aside for later.
4. Add green cardamom, black cardamom, black peppercorns, cinnamon sticks, cloves, and bay leaves to the remaining onions in the pot.
5. Add green chilies and mix well.
6. Add ginger garlic paste and cook for 2-3 minutes.
7. Add 1-2 tbs water and mix.
8. Stir in coriander powder, turmeric powder, garam masala powder, paprika powder, red chili powder, and salt. Mix well.
9. Add the onion and tomato mixture from the first step. Mix and cook until oil separates.
10. Add 1 kg chicken with bones. Mix until it changes color.
11. Cover and cook for 8-10 minutes.
12. Cook on high flame until oil separates, then remove the chicken from the pot into a separate bowl.
13. Layer half of the soaked and 3/4th boiled rice at the bottom of the pot.
14. Spread the cooked chicken over the rice layer.
15. Layer the remaining boiled rice over the chicken.
16. Sprinkle mace powder and nutmeg powder over the rice.
17. Combine yellow food color with 1-2 tbs water and pour over the rice. Garnish with the reserved fried onions.
18. Cover and steam cook for 10 minutes on low flame.
