# Invisible Apple Cake (Gâteau Invisible)

A dense, layered apple cake where thinly sliced apples dissolve into a custard-like batter.

## Ingredients

- 2.5 lbs apples
- eggs
- sugar
- flour
- salt
- baking powder
- milk
- melted butter
- whipped cream (optional)
- caramel sauce, with allspice (optional)

## Instructions

1. Using a mandolin, slice the apples thinly, about 1/8 of an inch.
2. Beat the eggs and sugar together for 3 or 4 minutes until light and airy.
3. Add half of the flour, which has been mixed with salt and baking powder, and beat slowly.
4. Add the milk and mix at a slightly higher speed.
5. Mix in the remaining flour and a little bit of melted butter.
6. Pour some of the batter into a parchment-lined loaf pan, then mix the rest of the batter with the sliced apples.
7. Layer the apple-batter mixture into the loaf pan, creating three layers of apples with batter in between, and finish with a layer of batter on top.
8. Bake in a 375°F oven until the center is cooked through.
9. Let the cake cool for a couple of hours to set properly before serving with whipped cream and a caramel sauce seasoned with allspice.
