# Funché de Bacalao

Let's keep celebrating Hispanic Heritage Month with one of the most traditional dishes in Puerto Rico, my grandpa's favorite dish.

- Cuisine: Caribbean
- Category: Dinner
- Language: en

## Ingredients

- Bacalao or Haddock
- Bay leaf
- Achiote oil
- Cilantro
- Onion
- Red pepper
- Orange pepper
- Yellow pepper
- Green pepper
- 1.5 cups Water
- 1 guajataca Water from boiling cod
- 0.33 cups Cornmeal

## Instructions

1. Start by boiling your cod or haddock, whatever you have, it's all good, it'll taste the same. And we're going to add a bay leaf there.
2. Then we add a bit of achiote oil there. This will give it color and will also help with our veggies.
3. Now we're going to add some cilantro, as much onion as your heart tells you, red, orange, yellow, and green peppers there. Any color you have, don't worry. You're the cook, you're in control!
4. Let these veggies sweat well and let the onions go translucent. And we'll be good.
5. Here now we're going to add a cup and a half of water there. And from the water where we boiled the cod, add the measure of a guajataca. That's the best way I can explain it, okay? Don't look at me with that tone of voice. There.
6. And add your cod there.
7. And give it a good stir, to avoid any lumps. Now, this is eating well. This is eating well! Funche!
8. Serve it on a plate.
