# SOUTHWEST DENSE BEAN SALAD with the best ever cilantro lime dress

This is a cold and refreshing southwest bean salad, packed with protein and fiber, that holds up incredibly well for meal prep and is drizzled with an addictive cilantro lime dressing.

## Ingredients

- 2 large bell peppers red, yellow or orange – chopped
- 0.5 small small red onion finely diced
- 10 oz package cherry tomatoes halved
- 1 large large jalapeño seeded, finely diced
- 15 oz can corn drained
- 15 oz can black beans rinsed, drained
- 15.5 oz can pinto beans rinsed, drained
- 1 tbsp taco seasoning
- 1 small handful cilantro chopped
- 1 lb cooked chicken chopped
- 0.5 cup cilantro loosely packed
- 3 tbsp lime juice fresh
- 1 tbsp apple cider vinegar or white wine vinegar
- 1 tbsp honey
- 1 tsp garlic powder
- to taste salt and pepper
- 0.25 cup extra virgin olive oil
- 2 tbsp non fat plain greek yogurt

## Instructions

1. Season and grill the chicken first so it has time to cool. Skip if using another cooked chicken or rotisserie chicken.
2. For the dressing, add cilantro, lime juice, apple cider (or white wine) vinegar, honey, garlic powder, salt and pepper to a food processor.
3. Blend just a few seconds, then slowly drizzle in olive oil while blending to emulsify.
4. Add greek yogurt and blend again until smooth.
5. In a large mixing bowl, add bell peppers, red onion, tomatoes, jalapeño, corn, beans, cilantro, and taco seasoning.
6. Chop the cooked chicken and add, along with 1/2 of the dressing.
7. Mix until combined and season with salt as needed.
