# Lucknowi Ghutwa Kabab

A classic Lucknowi dish, Ghutwa Kabab, made with marinated mutton keema and enriched with malai for a creamy, rich flavour.

## Ingredients

- 1 kg mutton keema
- 4 spn ginger garlic paste
- 2 spn green chilli paste
- 50 grm onion paste, paste
- 2 spn papaya paste
- to taste salt
- 1 spn caraway seed
- 2 spn yellow chilli
- 1 spn nutmeg
- 1 spn cinnamon
- 2 spn black pepper
- 1 spn khushbu masala
- 1 spn white pepper
- 200 grm desi ghee
- 4 cup water
- 150 grm fried onion, coarsely ground
- 200 grm malai
- 50 grm roasted chana powder
- cloves
- 20 grm dried rose petals
- 50 grm fresh coriander

## Instructions

1. Mix mutton keema with ginger garlic paste, green chilli paste, onion paste, papaya paste, salt, caraway seeds, yellow chilli, nutmeg, cinnamon, black pepper, khushbu masala, and white pepper. Allow it to marinate for 30 minutes.
2. Heat desi ghee in a pot, add the marinated keema, and sauté well.
3. Add water and cook, then add the fried onions.
4. Whisk the malai and add it to the keema mixture. Stir until well combined and fully cooked.
5. Add roasted chana powder to thicken the mixture and stir to cook.
6. Perform a 'dhungar' (smoking) process using cloves and a little desi ghee in a small vessel placed in the center of the pan, covering with a lid.
7. Garnish with dried rose petals and fresh coriander before serving.
