# Fermented Salsa

A simple, no-cook fermented salsa made from fresh vegetables and salt that ferments on the counter for 4 to 5 days.

## Ingredients

- tomato, halved
- jalapeño, seeded
- white onion
- cilantro, roughly chopped
- garlic, roughly chopped
- 2% percent of total weight salt
- lemon juice (optional)

## Instructions

1. Wash the vegetables in a baking soda bath.
2. Roughly chop the tomatoes, jalapeños, white onion, cilantro, and garlic.
3. Place all chopped vegetables into a food processor and pulse until it reaches a salsa consistency.
4. Transfer the mixture into a large mason jar using a funnel.
5. Add salt equal to 2% of the total weight of the salsa.
6. Add a squeeze of lemon juice.
7. Press down the mixture in the jar, cover with a lid, and let ferment on the counter for 4 to 5 days.
