1. Combine 2 and a quarter cups of warm water, 1 tablespoon of sugar, and 1 and a half tablespoons of yeast in a mixing pitcher.
2. Mix the yeast mixture, cover it with a towel, and let it sit for 10 minutes.
3. Once the yeast mixture is frothy, add it to a bowl containing 5 cups of flour and 2 teaspoons of salt.
4. Mix the flour and yeast mixture together until you get a shaggy dough.
5. Transfer the shaggy dough to a clean countertop and separate a piece for the cheddar jalapeño bagels.
6. Knead the dough for about 10 minutes.
7. For the cheddar jalapeño portion, add sliced jalapeños and shredded cheddar cheese to the dough and knead to incorporate.
8. Use a bench scraper to cut the cheddar jalapeño dough into 6 pieces for 6 bagels.
9. Turn each section of cheddar jalapeño dough into a little dough ball.
10. Knead the remaining plain dough for 10 minutes.
11. Cut the plain dough into 12 pieces for 6 plain bagels and 6 everything bagels.
12. Let all the dough balls rest for 15 minutes.
13. After 15 minutes, gently push your fingers through the center of each dough ball to create a hole, then carefully shape it to the desired size.
14. Let the shaped bagels rest for 30 minutes.
15. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and get a pot of water boiling.
16. Boil each bagel for 1 to 2 minutes per side.
17. Place the boiled bagels on a parchment-lined baking sheet.
18. Cover the bagels in egg wash using a basting brush.
19. Decorate some bagels with everything bagel seasoning.
20. Decorate some bagels with shredded cheddar cheese.

- Transfer the baked bagels to a cooling rack to prevent soggy bottoms.
