# Taco Pie

A comforting taco-flavored casserole topped with a layer of cornbread, perfect for families.

## Ingredients

- 1 lb ground beef
- to taste taco seasoning
- 1/2 onion, chopped
- 1 green pepper, chopped
- salt (optional)
- pepper (optional)
- 1 can corn, drained
- 1 can rotel
- 1 can tomato sauce
- 10 oz red enchilada sauce
- 2 pack martha white cornbread mix
- 2/3 cup milk
- 1/2 cup oil
- 2 egg

## Instructions

1. Brown the ground beef in a pan, breaking it into the smallest pieces possible.
2. Add taco seasoning, chopped onion, and chopped green pepper to the beef. Sweat them down until the onions are translucent.
3. Add the drained corn, Rotel, tomato sauce, and red enchilada sauce. Bring to a light boil and let thicken, then set aside.
4. In a bowl, mix cornbread mix, milk, oil, and eggs until there are no clumps.
5. Spread the meat mixture into the bottom of a baking pan.
6. Pour and spread the cornbread mixture evenly over the top of the meat.
7. Bake until the top is brown.

- If you don't like green chilies, you can use crushed tomatoes instead of Rotel.
