# French Onion Casserole

## Ingredients

- onion, peeled and sliced
- thyme, finely chopped
- salt
- black pepper
- beef better than bouillon
- heavy cream
- dijon mustard
- gruyère cheese
- butter

## Instructions

1. Peel onions and slice using a mandolin.
2. Add chopped thyme, salt, and black pepper to the onions, mixing well with your hands.
3. In a small pot, heat beef better than bouillon and heavy cream until it reaches a boil, then remove from heat and stir in Dijon mustard.
4. Let the onion mixture sit for 10 minutes, then use a paper towel to remove any excess moisture.
5. Layer the onions into a baking dish, pour the cream mixture over them, top with Gruyère cheese, and dot with butter.
6. Cover and bake at 325 degrees for 45 minutes.
7. Remove the foil and bake at 325 degrees for another 30 minutes.
8. Let the casserole sit for 5 minutes before serving.
