# Limoncello

A homemade Italian digestivo made by infusing lemon peels in alcohol and mixing with a simple syrup.

## Ingredients

- 8-9 whole organic lemon
- 750 ml everclear
- 2 1/2 cup sugar
- 4 cup cold water

## Instructions

1. Wash the lemons well and peel the skin.
2. Add the lemon peels into a jar with the everclear.
3. Store in a cool dark place and shake periodically for 25 days.
4. Combine sugar and water in a pot, bring to a boil, and reduce to a simmer to melt the sugar. Cut the heat and let it cool.
5. After 25 days, strain the mixture through a cheesecloth.
6. Marry the alcohol-soaked skins with the simple syrup and place in the freezer until well-chilled.

## Tips

- You can use vodka instead of everclear.
- Don't throw away the used lemon peels; dehydrate them to use in baked goods, dressings, tea, body scrubs, or spice rubs.
- Use the freshly squeezed lemon juice combined with simple syrup and water to make Italian lemon ice push pops or lemonade.
- Put lemon rinds in the garbage disposal to help it smell nice, but do not overload it.
