# Cookie Monster Cheesecake Bars

My inner child was beyond excited to bring these Cookie Monster cheesecake bars to life, and they were everything I envisioned them to be.

## Ingredients

- 2 cups crushed Oreo & Chips Ahoy
- 2 tbsp sugar
- 6 tbsp melted butter
- 16 oz cream cheese
- 0.75 cup sugar
- 1 tbsp vanilla
- 2 tsp blue food coloring
- 2 room temp eggs
- 0.5 cup room temp sour cream
- Chips Ahoy
- Oreos
- melted cookies and cream chocolate
- Chips Ahoy cookie
- Oreo

## Instructions

1. Start by making a crust out of crushed Chips Ahoy, crushed Oreos, sugar, and melted butter.
2. Once that mixture is on board wet sand, press it into the bottom of an 8x8 pan and bake on 350 for eight minutes.
3. Then turn your oven down to 325 and set your crust aside to cool.
4. In a large bowl, start beating your cream cheese, then add your sugar, vanilla extract, and blue food coloring and beat again.
5. Once that's fully incorporated, add your eggs and sour cream and beat one last time until smooth.
6. Then mix in all the Chips Ahoy and Oreos that your heart desires.
7. Bake that cheesecake on 325 for 40 minutes.
8. Finally, top your cool ass cheesecake bars with some melted cookies and cream chocolate, a Chips Ahoy cookie, a little bit more chocolate, and an Oreo.
