# Chinese Chicken Salad

A copycat recipe of the Nordstrom Cafe Chinese Chicken Salad.

## Ingredients

- 1 can mandarin orange
- 1/4 cup orange juice
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 3 tbsp fresh ginger, grated
- 3 tbsp sugar
- 2 tsp gochujang sauce (optional)
- 3 tbsp vegetable oil
- 2 tbsp toasted sesame oil
- 1 whole rotisserie chicken, shredded
- 2 whole romaine lettuce heart, sliced thin
- 6 cup napa cabbage, cored and sliced thin
- 2 whole red bell pepper, stemmed, seeded, and cut into 2-inch-long matchsticks
- 1 cup fresh cilantro leaf
- 1 cup salted dry-roasted peanut, chopped
- 6 whole scallion, sliced thin
- 1 package wonton wrapper
- for frying vegetable oil
- to taste salt

## Instructions

1. Combine orange juice, rice vinegar, soy sauce, ginger, sugar, and gochujang (if using) in a bowl. Slowly whisk in the vegetable oil and sesame oil to make the vinaigrette.
2. Toss the shredded rotisserie chicken with 2 tablespoons of the vinaigrette; let sit for 10 minutes.
3. Using kitchen scissors, cut the wonton wrappers into thin strips. Heat a shallow layer of vegetable oil in a skillet over medium heat. Fry the wonton strips in batches until golden and crispy, 1 to 2 minutes per batch. Transfer to a paper towel–lined plate to drain, and sprinkle immediately with salt.
4. Toss the romaine, napa cabbage, bell peppers, cilantro, peanuts, and scallions with the remaining vinaigrette in a large bowl. Transfer to a serving platter and top with the chicken, mandarin oranges, and crispy wonton strips.

## Tips

- Gochujang can be substituted with sriracha or red pepper flakes for heat.
