# Honey Mascarpone Peaches

## Ingredients

- 3 peaches
- 0.75 cup mascarpone
- 2 tbsp honey
- 1 tsp vanilla extract
- olive oil
- brown sugar
- fresh thyme

## Instructions

1. Brush the halved peaches with a little olive oil.
2. Sprinkle the peaches with brown sugar.
3. Grill until the the sugar begins to caramelize and the peaches have grill marks.
4. Mix together mascarpone, honey, and vanilla extract in a bowl.
5. Remove the peaches from the grill and set aside for them to cool.
6. Top with the mascarpone mixture and fresh thyme.
