## Ingredients

- 3.2 oz/90g onion
- 4 stalks small green onion
- 2 large egg
- 1 8 tsp salt
- 5 oz/140g beef
- 2 cloves garlic, minced
- 1 tsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp oyster sauce
- 0.5 tsp sugar
- 0.25 tsp baking soda
- 3 tsp corn starch
- 3 tsp water
- 3 tsp oil
- 2 tsp rice wine
- 1.5 tsp dark soy sauce
- 2 cup cooked rice
- 1 tsp dark soy sauce
- 0.25 tsp salt
- 1 tbsp oil

## Instructions

1. Cut a quarter of an onion into small pieces, about half an inch or one centimeter in size.
2. Cut four green onions into small pieces. Keep the pieces from the white part and green part of the green onion separate.
3. Crack two eggs, add some salt to them and lightly beat them.
4. The cut we are using today is the tri-tip. Cut the beef into large strips and then cut them into small pieces.
5. Marinate the beef with minced garlic, soy sauce, dark soy sauce, oyster sauce, sugar, baking soda, corn starch and a little bit of water. Mix them up and then add a touch of oil and mix the oil into the beef.
6. You can use freshly made rice or leftover rice.
7. Add a little bit of oil to a hot pan and pan-fry the egg first. Break up the eggs as they cook so they cook faster.
8. Keep pan-frying the eggs until they are golden on both sides and remove them from the pan.
9. Then add a little bit more oil to the pan and stir-fry the beef. Spread out the beef in the pan and let them sear on one side, then flip them over and let them sear on the other side.
10. After searing, add some rice wine and stir-fry the beef to cook off the alcohol.
11. Add some dark soy sauce and keep stir-frying so the beef can pick up the color.
12. Once the color looks even, add the chopped onion and the white part of the green onion. Keep stir-frying just enough to mix everything together and quickly remove them from the pan.
13. Stir-fry the rice. The rice we are using here is leftover rice and it's cold. It takes a couple of minutes to reheat them in the pan. You can preheat them in the microwave oven.
14. When the rice is hot add some dark soy sauce. Keep stir-frying the rice until the color is even.
15. Taste the rice now and season with a little more salt if needed.
16. Put the eggs, beef and onion back into the pan. Keep stir-frying to mix everything together.
17. For the final touch, add the rest of the green onion. Give the fried rice a few more tosses and we are done.
