# Air Fryer Whole Chicken with Potato Leek Gratin

## Ingredients

- 1 whole orange
- 1 whole lemon
- 1 whole leek
- 1 small bunch thyme
- 1 small bunch rosemary
- 1 small bunch sage
- 1 tbsp black peppercorns
- 8 clove garlic
- 6 whole dried bay leaves
- 1/3 cup kosher/sea salt
- 1/3 cup sugar

- 4-5 lb whole chicken
- 1/2 cup unsalted butter
- 2 whole sweet potato
- 1/3 cup flour
- 2 cup heavy cream
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- salt (optional)
- black pepper (optional)

## Instructions

1. Prepare the brine by slicing the orange, lemon, and leek, and combine with herbs, peppercorns, garlic, bay leaves, salt, sugar, and water in a large container.
2. Submerge the chicken in the brine.
3. Melt butter in a pan, add sliced leeks, salt, pepper, and minced garlic, sautéing until soft.
4. Stir in flour, followed by heavy cream, and simmer until thickened to create a sauce.
5. Layer sliced sweet potatoes and the leek sauce in a baking dish.
6. In a bowl, mix softened butter with oregano, paprika, garlic powder, onion powder, salt, and pepper.
7. Remove the chicken from the brine, pat it dry, and coat it thoroughly with the prepared compound butter.
8. Place the seasoned chicken in the air fryer and roast.
