# Huevos Con Chorizo

## Ingredients

- guajillo chiles
- ancho chiles
- garlic cloves
- bottle cap full white vinegar
- smoked paprika

- Mexican oregano

- 85 15 ground beef
- onion
- chorizo

- cheese

## Instructions

1. To start, rehydrate the guajillo and ancho chiles by pouring hot water over them in a bowl.
2. After a few minutes, transfer the rehydrated chiles to a blender.
3. Add a few cloves of garlic to the blender.
4. Add a bottle cap full of white vinegar to the blender.
5. Add smoked paprika and chipotle chili powder to the blender.
6. Add some Mexican oregano and cumin to the blender.
7. Add a bit of bay leaf, salt, and pepper to the blender.
8. Blend until it forms a nice paste.
9. Add the paste to some ground beef (85/15).
10. Put on a glove and massage the paste into the ground beef.
11. To make the eggs, start by sautéing an onion in a pan.
12. Once the onion is sweaty, add in your homemade chorizo.
13. Break down the chorizo and allow it to brown.
14. Whisk your eggs, then add them into the pan with the chorizo.
15. Lower the heat and cover the pan with a lid to let the eggs cook.
16. Add a light touch of cheese to the eggs.
17. Sprinkle some cilantro on top to make it healthy.
18. Serve by scooping it up with a tortilla.

## Tips

- You might have to scrape the blender sides down a few times when blending the paste, but you do not want this mixture to be too watery.
