## Ingredients

- 2 cups warm water
- 2 tablespoons active yeast
- 2 tablespoons white sugar
- 4 cups bread flour or high-grade flour
- 2 tablespoons salt
- olive oil
- 75 grams butter
- 15 cloves garlic
- chopped parsley
- vegan mozzarella

## Instructions

1. Combine and mix 2 cups of warm water, 2 tablespoons of active yeast, and 2 tablespoons of white sugar in a bowl. Cover for about 10 minutes to let the yeast activate.
2. Add 4 cups of bread flour (or high-grade flour) and 2 tablespoons of salt to the mixture and mix until combined.
3. Drizzle a little olive oil on top of the dough to prevent sticking, then cover it with glad wrap and let it rise for about 30-60 minutes.
4. Wet your hands, stretch, and fold the dough on top of itself as shown in the video.
5. Cover the dough again and let it rise for another 30-60 minutes.
6. In a pot, add 50 grams of butter, 15 cloves of minced garlic, and some chopped parsley. Cook on low heat until the butter is melted and combined. Add another 25 grams of butter if needed to make it more liquidy.
7. Line a baking tray with baking paper and drizzle some olive oil. Place the dough in the tray and stretch it to cover the entire bottom.
8. Evenly spread about 90% of the garlic butter mixture on the dough.
9. Sprinkle vegan mozzarella (or your preferred cheese) over the garlic butter mixture.
10. Fold the dough on top of itself so all the cheese is in the middle, then flip it over.
11. Cover the dough and let it rise and fill out the pan for about 30-40 minutes.
12. Drizzle some oil on top of the dough and on your fingers to prevent sticking, then dimple the dough with your fingers.
13. Pop the focaccia in the oven at 200 degrees Celsius (392 Fahrenheit) for 20 minutes.
14. Take the focaccia out, sprinkle some more cheese on top, and put it back in the oven for another 10 minutes.
15. Once out of the oven, drizzle the remaining garlic butter mixture on top and spread it around (a kitchen brush can be used if available).
