A refreshing twist on the classic Enzoni cocktail with the addition of pineapple.

## Ingredients

- 7 Pineapple Chunks
- 40 ml Lemon Juice
- 1.3 oz Lemon Juice
- 30 ml Rich Simple Syrup
- 1 oz Rich Simple Syrup
- 60 ml Aperol
- 2 oz Aperol
- 60 ml Gin
- 2 oz Gin
- Ice

## Instructions

1. Add pineapple chunks to a glass.
2. Add lemon juice.
3. Add simple syrup.
4. Muddle the ingredients.
5. Add Aperol.
6. Add gin.
7. Add ice.
8. Shake.
9. Fill a glass with ice.
10. Strain the cocktail into the glass.
11. Garnish with pineapple chunks and mint.
