# Crockpot Creamy Chicken & Potatoes

Tender, seasoned chicken thighs and buttery baby potatoes slow cooked in a creamy sauce.

## Ingredients

- 2 lbs boneless, skinless chicken thighs
- 2 lbs yellow baby potatoes, halved
- olive oil
- garlic powder
- paprika
- oregano
- salt
- black pepper
- chicken rub (optional)
- 1 cup chicken broth
- 4 tbsp butter, sliced into pats
- 1/3 cup heavy cream, slightly warmed
- 2 tbsp cornstarch

## Instructions

1. Add the chicken thighs to a large bowl, drizzle with olive oil, and season with garlic powder, paprika, oregano, salt, black pepper, and optional chicken rub.
2. Toss the chicken until well coated and let marinate for a few minutes.
3. Cut the yellow baby potatoes in half.
4. Place the seasoned chicken in the bottom of the crockpot and layer the potatoes over the chicken, seasoning them with extra chicken rub.
5. Pour the chicken broth over the chicken and potatoes.
6. Whisk the cornstarch into the warmed heavy cream until smooth and pour into the crockpot, stirring to combine.
7. Layer the butter pats over the chicken.
8. Cover and cook on HIGH for 3.5 hours or LOW for 5-6 hours until chicken is cooked and potatoes are fork-tender.
9. Stir the sauce before serving.
