# Crack Tater Tot Casserole

Crack Tater Tot Casserole is an easy make ahead casserole perfect for Christmas brunch.

## Ingredients

- 32 oz frozen tater tots
- 2 lbs bacon
- 2 cups shredded cheddar cheese
- 8 eggs
- 2 cups milk
- 3 tablespoons ranch seasoning
- 1 tablespoon cracked black pepper

## Instructions

1. Preheat oven to 350° and spray a 9x13 baking dish with nonstick cooking spray.
2. Add the frozen tater tots, cooked and drained bacon, and shredded cheddar cheese to the baking dish and mix altogether.
3. In a separate bowl, combine the eggs, milk, ranch seasoning, and cracked black pepper. Whisk well.
4. Pour the egg mixture over the tater tot mixture in the baking dish.
5. Bake at 350° for 45-60 minutes, or until the eggs are set and no longer jiggly.
6. Once cooled, cover with foil and freeze for later use.  Thaw in the refrigerator the day before serving and reheat in the oven at 350° until heated through.
