## Ingredients

- 1 onion
- 1 green bell pepper
- 1 celery
- 1 garlic
- 7.62 $ chicken thighs
- 6.46 $ smoked sausage
- 1.98 $ chicken broth
- 0.97 $ tomato paste
- 1.96 $ crushed tomatoes
- 0 olive oil
- 0 salt
- 0 pepper
- 0 granulated garlic
- 0 granulated onion
- 0 creole seasoning
- 3 bay leaves

## Instructions

1. Go to the store and get an onion (69¢), a green bell pepper (89¢), celery (98¢), garlic (72¢), your favorite cut of chicken ($7.62), your favorite smoked sausage ($6.46), chicken broth ($1.98), tomato paste (97¢), and crushed tomatoes ($1.96).
2. Trim up the chicken, add olive oil, salt, and pepper. Set aside.
3. Throw the sausage in a Magnalite and render the fat for extra flavor. Remove sausage with a slotted spoon.
4. Add the chicken to the drippings, let it get some color, then remove and put with the sausage.
5. Add the trinity of vegetables (onion, green bell pepper, and celery). The moisture from the vegetables should help deglaze the pan.
6. Sauté until tender. Then, add in the garlic and tomato paste.
7. Cook that down for another minute.
8. Add all the meats back into the pot with their drippings.
9. Add crushed tomatoes and chicken broth.
10. Season with granulated garlic, granulated onion, and creole seasoning. Add bay leaves and let simmer on low for about 40-45 minutes. If you want a looser gravy, add more chicken broth.
11. Mix it up. Serve over rice or noodles.
