## Ingredients

- 0.75 cup warm water
- 1 teaspoon active dry yeast
- 0.5 teaspoon salt
- 0.5 tablespoon brown sugar
- 0.5 tablespoon melted unsalted butter
- 1.5 cups bread flour
- 1 tablespoon brown sugar
- 0.25 cup dark beer
- 0.5 cup baking soda
- 0 coarse salt
- 0 melted butter

## Instructions

1. Mix together three quarters of a cup of warm water with one teaspoon of active dry yeast and let it sit for five minutes.
2. Mix in half a tablespoon of melted butter, half a tablespoon of brown sugar, and half a teaspoon of salt.
3. Slowly start mixing in one and a half to two cups of bread flour until a cohesive ball of dough forms.
4. Knead the dough on a floured surface for five minutes and then form it into a bowl. Cover it with a dry kitchen towel and a slightly damp towel on top to keep it moisturized, and then let it sit for an hour.
5. Punch the dough down and cut it into two even pieces, then stretch the dough into a long rope and form it into a pretzel shape.
6. Cover your pretzels and let them sit for at least 30 minutes to another hour.
7. For the baking soda bath, add a tablespoon of brown sugar, a quarter cup of dark beer, and about half a cup or more of baking soda to a pot of water and bring it to a simmer.
8. Add your pretzels to the bath for 30 seconds on each side, and then add them to a baking sheet and sprinkle them with coarse salt.
9. Bake them at 425 degrees until they're golden brown, and then brush on some melted butter.
