# Matcha Basque Cheesecake

A simple matcha-flavored version of a Basque cheesecake that is easy to make at home.

## Ingredients

- 8 g matcha powder
- 60 g sugar
- 250 g soft cheese, softened
- 2 whole egg
- 1 tbsp plain flour
- 250 ml double cream

## Instructions

1. Preheat the oven to 250°C.
2. Add the matcha powder and sugar to a bowl and mix well.
3. Add the soft cheese and mix until smooth.
4. Add the eggs one at a time, mixing well after each addition.
5. Add the plain flour and cream in order, mixing each time.
6. Bake at 230°C for 20 minutes, then at 210°C for another 10 minutes.
7. Cool down and refrigerate overnight.

## Tips

- If using cream cheese, take it out of the fridge beforehand to soften.
- You can sift the flour and cream through a tea strainer, but it is fine to add them directly.
- If it's not caramelised enough, bake a little longer to get a deeper colour and more flavour.
- 8g of matcha gives a mild flavour; for a stronger taste, you can increase it up to around 20g.
- This recipe is lightly sweetened; add more sugar to taste if you prefer it sweeter.
