# One Pot Pepperoni Pizza Orzo

## Ingredients

- 1 whole medium onion, diced
- 1 drizzle olive oil
- 1-2 tbsp tomato paste
- 1 tsp italian seasoning
- 1 dash red pepper flake
- 1 pinch kosher salt
- 1 to taste black pepper
- 4 clove garlic, minced
- 1 1/2 cup dried orzo
- 1 1/2 cup marinara
- 1 1/2 cup chicken broth
- 1 bunch shredded mozzarella cheese
- 1 batch pepperoni

## Instructions

1. Dice one medium onion.
2. Heat a deep pan or pot over medium-high heat with a drizzle of olive oil.
3. Add the diced onion to the pan.
4. Stir in the tomato paste, Italian seasoning, red pepper flake, salt, black pepper, and minced garlic. Keep moving for one minute until the tomato paste darkens.
5. Stir in the dried orzo and toast for one minute.
6. Add the marinara and chicken broth. Mix everything together.
7. Simmer uncovered for ten minutes until the orzo is tender. Stir occasionally to prevent sticking.
8. Turn off the heat, cover the pan with shredded mozzarella cheese, and add pepperoni slices on top.
9. Melt the cheese by either covering the pan with a lid or placing the oven-safe pan under a broiler for two to three minutes.
