# Toum

A fluffy, addictive garlic sauce commonly served at shawarma shops.

## Ingredients

- 1 cup fresh peeled garlic
- 3 tsp salt
- 4 cups canola oil
- 4 tbsp lemon juice
- citric acid (optional)

## Instructions

1. Add peeled garlic and salt into a food processor and pulse until a paste is formed, scraping down the sides as needed.
2. Place a styrofoam cup with a small hole poked in the bottom on top of the food processor lid to act as a funnel.
3. Slowly pour canola oil through the hole in the styrofoam cup while the food processor is running to emulsify the mixture, alternating with additions of lemon juice.
4. Add a small amount of citric acid if desired for more tanginess, otherwise add more lemon juice.

## Tips

- Use the freshest garlic you can find.
- Use canola or vegetable oil; olive oil will not work for this emulsion.
