# Tennessee Onion Casserole

## Ingredients

- 3 lb sweet onion
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp granulated garlic
- 1 tsp dry mustard
- 2 tsp brown sugar
- 0.5 tsp cayenne pepper
- 1 tsp fresh thyme leaves, stripped
- 4 oz Tillamook mild cheddar cheese, freshly grated
- 4 oz gruyere cheese, freshly grated
- 0.5 cup pecorino romano cheese, freshly grated
- 3 tbsp butter, cut into small pieces

## Instructions

1. Peel and thinly slice onions to a thickness of approximately 1/4 inch.
2. Toss the onions in a large bowl to separate all the rings.
3. In a small bowl, combine salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne pepper, and stripped fresh thyme leaves.
4. Add olive oil to the onions and toss to coat.
5. Add half of the spice and herb mixture to the onions and toss thoroughly. Add the remaining mixture and toss again.
6. Layer half of the seasoned onions into a greased 13x9 baking dish.
7. Sprinkle 2 oz of grated cheddar and 2 oz of grated gruyere cheese over the onion layer.
8. Top with the remaining onions followed by the remaining 2 oz of cheddar and 2 oz of gruyere cheese.
9. Top with a layer of grated pecorino romano cheese and dot the surface with small pieces of butter.
10. Cover the dish tightly with foil and bake at 350 degrees for 45 minutes.
11. Remove the foil and bake for an additional 30 minutes.

## Tips

- Use either light or dark brown sugar.
- You could use sharp cheddar instead of Tillamook mild cheddar.
- You could also use parmesan-reggiano or grana padano instead of pecorino romano.
