# Fennel and Pistachio Cream Salad

A simple and delicious fennel and pistachio cream salad.

## Ingredients

- 3 tablespoons raw pistachios
- 0.5 cup Asiago
- 0.5 cup extra virgin olive oil
- 1 small bulb fennel
- 1 Granny Smith apple Granny Smith apple
- 1 lemon lemon
- 1 tt kosher salt
- 4 twists black pepper
- 1 splash EVOO
- 0.25 cup fennel fronds
- 12 slices pecorino

## Instructions

1. Blend the pistachios until smooth. Add Asiago and olive oil and blend until smooth.
2. Toss in a large bowl with apple and fennel. Season and adjust with lemon, salt and pepper.
3. Garnish with olive oil, fronds and pecorino.
