## Ingredients

- 1 unsmoked gammon joint
- 500 ml water
- 1 onion
- 2 carrots
- 2 stalks celery
- 1 bottle ginger beer
- 2 tbsp brown sugar
- 1 tbsp honey
- 1 tbsp mustard
- 200 g cheese
- 2 tomatoes
- 100 g mayonnaise
- 1 tbsp mustard
- 2 bread

## Instructions

1. Buy an unsmoked gammon joint and soak it in water for 48 hours before cooking.
2. Add the gammon to a deep pan with onions, carrots, celery and ginger beer.
3. Top up with water and bring to a boil on the stove. Reduce to a simmer for around 2 hours. Turn it over halfway through.
4. Check the internal temperature with a meat thermometer. It should reach 75 degrees Celcius.
5. With a sharp knife, trim off the fat and chop it up for the wildlife.
6. Make the glaze by mixing brown sugar, honey, and mustard until smooth.
7. Pour half of the glaze over the ham and brush it in. Bake in the oven for 15 minutes or use an air fryer.
8. Add the remaining glaze and cook for another 15 minutes.
9. Strain the liquid from the pot. This can be used as a liquid stock.
10. Slice the ham and store it in a Tupperware box in the fridge for around a week. It can be also frozen for use in pies and soups.
11. Deglace the roasting pan to get the juices from the glaze and pour it over the ham to keep it moist.
12. Make sandwiches with the ham, bread, cheese, tomato, and mayonnaise.
