## Ingredients

- 4 each cod fillets
- to taste Salt
- to taste black pepper
- 2 tbsp olive oil or sesame oil
- 3 tbsp low-sodium soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar or fresh lime juice
- 1 tbsp freshly grated ginger
- 2 garlic cloves, minced
- 1 tsp cornstarch
- 2 green onions, sliced
- 1 tsp toasted sesame seeds
- for serving Cooked white or jasmine rice

## Instructions

1. Pat the cod fillets very dry with paper towels. Season both sides lightly with salt and black pepper. Dry fish sears better and stays flaky.
2. In a small bowl, whisk together the soy sauce, honey, rice vinegar (or lime juice), ginger, garlic, and cornstarch if using. Set aside so the flavors blend.
3. Heat the oil in a large skillet over medium heat.
4. Add the cod fillets and cook for 3 to 4 minutes without moving them, until lightly golden.
5. Turn carefully and cook another 2 to 3 minutes, just until the fish flakes easily.
6. Lower the heat.
7. Pour the sauce into the pan and spoon it over the cod as it simmers for 1 to 2 minutes. The sauce should coat the fish softly, not boil hard.
8. Transfer the cod to plates over hot rice.
9. Spoon extra sauce on top and finish with green onions and sesame seeds if you like.
