# Frito Cowboy Cabbage

## Ingredients

- 16 oz bag coleslaw
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 jalapeño, diced
- 1 red bell pepper, diced
- green onions
- 0.25 cup fresh chopped cilantro
- 1 tbsp taco seasoning
- 1 pinch cumin
- 0.5 cup mayonnaise
- 0.5 cup sour cream
- 0.25 cup fresh squeezed lime juice
- 2 tbsp adobo sauce
- 1 bag chili cheese Fritos

## Instructions

1. Add a 16 oz bag of coleslaw to a mixing bowl.
2. Add a can of rinsed and drained black beans.
3. Add a can of drained corn.
4. Add a diced jalapeño.
5. Add a diced red bell pepper.
6. Add green onions.
7. Add a quarter cup of fresh chopped cilantro.
8. Add a tablespoon of taco seasoning.
9. Add a pinch of cumin.
10. Toss all the ingredients together.
11. Once combined, set the salad aside.
12. Prepare the dressing by combining half a cup of mayonnaise.
13. Add half a cup of sour cream.
14. Add a quarter cup of fresh squeezed lime juice.
15. Add two tablespoons of adobo sauce.
16. Whisk the dressing ingredients together.
17. When ready to serve, bring the salad back.
18. Pour the dressing on top of the salad.
19. Grab a bag of chili cheese Fritos.
20. Pour most of the bag of Fritos on top of the salad.
21. Give the salad another really good toss.
22. Sprinkle the rest of the Fritos on top for extra crunch.
23. Serve the salad.

## Tips

- When getting adobo sauce, try to fork out the chipotle peppers first before scraping the peppers if more sauce is needed.
