# Homemade Potato Starch and Crispy Potato Pancakes

This recipe shows how to make your own potato starch from scratch and then use the leftover shredded potatoes to make crispy potato pancakes.

## Ingredients

- Potatoes
- Green onions
- Onion
- Water
- Salt
- Oil

## Instructions

1. Grate the potatoes.
2. Put the grated potatoes in a bowl with water.
3. Squeeze the water from the grated potatoes using a cheesecloth into a bowl.
4. Let the potato starch settle at the bottom of the bowl and carefully pour out the red water.
5. Add clean water to the starch and stir, then let it settle again and pour out the water.
6. Repeat the washing process to purify the potato starch.
7. Spread the wet potato starch on a baking sheet lined with parchment paper.
8. Let it dry completely.
9. Break the dried potato starch into smaller pieces.
10. Blend the dried potato starch into a fine powder.
11. Chop the green onions.
12. Grate the onion.
13. Add chopped green onions and grated onion to the leftover shredded potatoes.
14. Add potato starch and salt to the mixture.
15. Mix all ingredients together.
16. Heat oil in a pan.
17. Form small patties from the potato mixture and place them in the hot pan.
18. Press down the patties with a spatula to flatten them.
19. Cook until golden brown and crispy on both sides.
