# Banana Bread Cinnamon Rolls

## Ingredients

- 3/4 cup warm milk
- 1 packet active dry yeast
- 1/4 cup granulated sugar
- 1 egg, room temp
- 1/2 cup mashed overripe banana
- 1/4 cup unsalted butter, melted
- 3 1/2 cup all purpose flour
- 1 tsp salt
- 1/3 cup warm heavy cream
- 5 tbsp unsalted butter, room temp
- 1 1/4 cup brown sugar, packed
- 1/3 cup mashed banana
- 1 tbsp cinnamon
- 1/2 tsp vanilla extract
- 2 tsp cornstarch
- banana pieces (optional)
- 6 oz cream cheese, room temp
- 1/4 cup unsalted butter, browned and cooled
- 1 1/2 cup powdered sugar
- 3/4 tsp vanilla extract
- 1 pinch salt
- banana slices (optional)
- cinnamon (optional)

## Instructions

1. Combine the warm milk, sugar, and yeast. Let sit 5-10 min until foamy.
2. Add egg, mashed banana, and melted butter, mix. Stir in salt and flour. Mix until a soft dough forms.
3. Knead the dough for 8-10 min.
4. Place in a lightly greased bowl, cover, and let rise for 1-1½ hrs or until doubled.
5. For the filling, mix the soft butter, brown sugar, mashed banana, cinnamon, vanilla, and cornstarch until combined/spreadable.
6. Roll dough into a large rectangle on a lightly floured surface.
7. Spread the filling evenly all over. Scatter some small pieces of bananas on top.
8. Slice 8 pieces then roll them each up tightly, or tightly roll the whole thing then slice.
9. Place in greased 9x13 pan. Cover & let rise ~30 more min.
10. Pour warm heavy cream over the rolls right before baking.
11. Bake at 350°F for 22-28 min until golden.
12. While it bakes, brown the butter over medium heat in a saucepan until nutty and golden. Cool until soft.
13. To make the icing, beat cream cheese and brown butter together until smooth. Then beat in powdered sugar and vanilla.
14. Spread over warm rolls. Top with banana slices and some cinnamon.

## Tips

- Only add more flour if the dough is super sticky.
- If the filling is too runny, add a tbsp of flour.
- Don't overstuff with banana pieces.
- Browning the butter for the icing is optional but highly recommended.
- Put the browned butter in the fridge to speed up cooling until it's soft in texture.
