## Ingredients

- 4 extra large yellow or sweet onions
- 8 jalapeños
- 2 tsp salt
- 1 tbsp honey
- 0.5 cup avocado oil (or any neutral oil)

## Instructions

1. Thinly slice the onions and jalapeños.
2. Add everything to a large pot: onions, jalapeños, oil, and salt.
3. Cook on medium heat, stirring often.
4. After about 20–30 minutes, the onions will soften and release liquid.
5. Increase heat slightly to bring it to a gentle simmer.
6. Continue cooking for about 1 hour total, stirring frequently so it doesn’t burn.
7. Once the mixture becomes soft, golden, and jam-like, stir in the honey.
8. Cook another 5–10 minutes, then remove from heat.
9. Let cool — it will thicken more as it cools.
