## Ingredients

- 1 lb trimmed lamb stew meat
- 1 large onions
- 4 cups broth
- 1 can dark irish beer (like Guinness)
- 1 tsp thyme
- 2 large white potatoes
- 6 large carrots
- 1 large sweet potatoes
- 1 handful parsley
- 1 tsp salt
- 1 tsp pepper

## Instructions

1. Start with trimmed lamb stew meat, season it, and brown it in batches.
2. Add some onions to the same pot. You may need to deglaze with a little bit of broth or water to scrape up all of those brown bits from the bottom.
3. Get those nice and soft and browned, and add your broth, and a can of dark Irish beer (like Guinness or another Irish Stout).
4. Add the lamb back to the pot, add some thyme, stir, and cover and simmer for a while, until the lamb is nice and tender.
5. Stir in white potatoes and carrots, cook those for about 10 minutes or so.
6. Then, add sweet potatoes, and cook until all of the vegetables are nice and tender.
7. Transfer some of the vegetables to a blender as well as some of the broth from the pot.
8. Blend it together until it's a nice smooth puree and stir back into the pot.
9. Finally, add some parsley.
10. Make sure you season to taste with a lot of salt and pepper.
