# Brownie

## Ingredients

- 7 oz dark chocolate
- 0.5 cup butter, unsalted
- 1 teaspoon instant coffee
- water
- 1 cup white sugar
- 0.5 cup brown sugar
- 0.25 teaspoon salt
- 3 Eggs
- 0.66 cup Flour
- 0.33 cup Cocoa powder

## Instructions

1. Chop the dark chocolate.
2. Transfer the chopped chocolate into heat proof bowl and add butter, and instant coffee (optional).
3. Bring water to simmer and set the bowl over a double boiler.
4. Melt completely and set aside to cool slightly.
5. In another bowl, add white sugar, brown sugar, salt and eggs.
6. Beat until light and fluffy.
7. Slowly pour in chocolate mixture while constantly mixing.
8. Sift in the flour and cocoa powder.
9. Fold just until combined, do not over mix.
10. Pour into an 8-inch square baking pan.
11. Bake at 350F for 25-30 minutes.
12. Allow to cool before cutting and cut into squares.
