- 2 chipotle peppers in adobo sauce
- 1 cup Southwestern corn
- 1 cup black beans
- oil for frying
- egg roll wrappers
- cheese

## Instructions

1. To our blender cup add 4 ounces of cream cheese, half a cup of cilantro, 1/4 of a cup of sour cream, 1 avocado, 1 garlic clove, the juice of half a lime, 1/4 of a cup of water, 1/2 a teaspoon of onion powder and 1/2 a teaspoon of salt.
2. Now we're just going to be blending until smooth.
3. Once we have that, we're just going to transfer it to our bowl.
4. Now we're just going to refrigerate it until it's time to enjoy it.
5. To make our filling, on our pan over medium high heat we're going to heat up a little bit of oil.
6. Once the oil is nice and hot, I'm going to add our chicken. Just make sure to cut it into small little cubes.
7. To that, add all of our spices.
8. Now, mix it and allow it to cook for 3 minutes.
9. After 3 minutes, our chicken should be fully cooked. Of course, make sure that you check it.
10. Here, we're just going to remove it from the heat.
11. Now, to the pan we're going to add a little bit more oil.
12. Now add the onion along with the bell pepper and jalapeño and sauté it for a couple of minutes.
13. After a couple of minutes, add the tomato, cilantro, minced garlic and chipotle.
14. Mix it and allow it to cook for 1 minute.
15. After the minute, add the Southwestern corn, beans. Mix it together and allow it to cook for another minute.
16. Lastly, we're going to return our cooked chicken to our pan.
17. Now just mix it all together.
18. Now, we're just going to turn it off and allow our filling to cool down.
19. And once our filling has cooled down, we can now get ready to wrap our egg rolls.
20. I'm going to begin by getting my egg roll wrapper.
21. I'm going to be adding some cheese and on top of that, we're going to grab our filling.
22. Now, I'm going to grab some water, run it on the edges of my wrapper.
23. Now we grab the ends. Close it to form an envelope. Make sure that you seal the edges.
24. Now grab one side and begin to close it.
25. Once we get to the end, we're just going to add more water.
26. And we repeat the process with the rest of our egg rolls.
27. Once we have our egg rolls all nice and wrapped, now we can get ready to fry them.
28. Here I have my oil set over medium heat. We're just going to allow it to get nice and hot.
29. Once the oil is nice and hot, we're going to carefully place our egg rolls and just allow them to get nice and golden.
30. Once our egg rolls are nice and golden all around, I'm going to remove them from our oil.
31. And just repeat the process with the rest of our egg rolls.
32. Once we have our egg rolls, we can now get ready to enjoy it.
