# Foul Mdammas

A classic vegetarian and vegan Middle Eastern dish made with mashed fava beans.

## Ingredients

- 16 oz fava bean
- 1 tbsp olive oil
- 2-3 garlic clove, minced
- 2 scallion, thinly sliced
- 1/2 cup water (optional)
- 1 tsp cumin
- 1/2 tsp salt (optional)
- 1 tsp paprika
- 1 tsp dried parsley
- 1/2 lemon, juiced
- 1 tbsp cilantro, chopped
- to garnish olive oil (optional)

## Instructions

1. Drain the canned fava beans and rinse them well.
2. Chop the garlic cloves, scallions, and fresh cilantro.
3. In a pot, heat olive oil and fry the minced garlic and sliced scallions until fragrant.
4. Add the rinsed fava beans and water to the pot.
5. Season with cumin, salt, paprika, and dried parsley, then stir to combine.
6. Let the beans cook until softened, then mash them with a potato masher.
7. Remove from heat, stir in the lemon juice and chopped fresh cilantro, then drizzle with more olive oil before serving.
