# Mexican Carnitas

## Ingredients

- 4 lbs pork shoulder
- 1 pint manteca (pig fat/lard)
- 1 whole Mexican Coca Cola
- 1 whole orange
- 1 whole onion
- 1 tbsp peppercorns
- 1 head garlic
- 4 whole bay leaves
- 2 tbsp salt
- to dissolve salt water

## Instructions

1. Heat up pig fat to roughly 350 degrees.
2. Sear pork chunks in batches until golden brown.
3. Lower fat temperature until there is no bubbling and just a light simmer.
4. Add all pork back into the pot.
5. Pour in the salt water mixture and 1 Mexican coke.
6. Squeeze the whole orange into the pot and drop the rind right in.
7. Cut the onion in half and add it to the pot.
8. Add the garlic halves, bay leaves, and peppercorns.
9. Simmer uncovered for at least 4 hours until ultra tender.
10. Chop it up and serve on warm tortillas.

## Tips

- Prepare the salt water mixture by mixing the salt with enough water to dissolve it before adding to the pot.
- Cut the garlic head in half before adding to the pot.
- Cut the onion in half before adding to the pot.
