# Ghanaian Style Jollof Rice

## Ingredients

- 1 whole onion
- 4 whole tomato
- 3 whole red pepper
- 1 handful garlic
- 2 piece fresh ginger
- 2 whole scotch bonnet
- to taste cooking oil
- 1 tub tomato paste
- 3 whole maggi cube
- 2 whole bay leaf
- 1 tbsp curry powder
- 1 tsp thyme
- 3 cup long grain rice
- 2 cup stock

## Instructions

1. Dice half the onion and reserve the other half.
2. Add the tomatoes, red peppers, remaining onion, garlic, ginger, and scotch bonnet peppers to a blender.
3. Blend the ingredients into a smooth puree.
4. Heat oil in a large deep pan and add the diced onion.
5. Add the tomato paste and cook out the raw flavor for at least 5 minutes.
6. Add the tomato mixture to the pan and cook down until thickened and oil separates.
7. Season with maggi cubes, bay leaves, curry powder, and thyme.
8. Stir in the washed long grain rice.
9. Add enough stock to cover the rice.
10. Cover with parchment paper and aluminum foil, then secure with a lid.
11. Once bubbling, lower the heat to a simmer for 30 to 40 minutes, stirring halfway through.
12. Fluff the rice before serving.
